Gluten Free Biscuit Recipe

Gluten free doesn't have to be bland and dense.  If you have the right ingredients and recipe you'll have great success with gluten free baked goods.  Really gf has come a long way with its taste and consistency over the years.  Something that is very true for lots of recipes is that you want to find specific recipes targeted for gf as the flour is not always a 1:1 ratio.
After you get used to using gf flour, you figure out what needs a specific recipe and what you can just interchange the flour in.

For biscuits I have never found a good interchangeable recipe so I'm going to share this fluffy recipe with you...

2 cups gluten free flour mix
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
4 Tablespoons butter
1/2 half and half
1/2 tsp apple cider vinegar
1/2 sour cream or plain yogurt

Whisk together the dry ingredients, cut in the butter until it resembles fine crumbs(don't over mix), add the yogurt and milk.  mix gently and knead just enough to get it stuck together.

Now I don't roll these out.  I just form a biscuit in my had and put them in a hot buttered cast iron skillet.  If you would like to roll out and cut, it is suggested that you do that on parchment paper.

Bake at 375 for 13-14 minutes.  *do not overcook
poke gently with a fork and brush with milk and butter(if you'd like)

Blessings and happy baking,
Lanie
